2010 summer fancy food show report

I attended the 2010 fancy food show this past sunday and monday. I had a good time.

Highlights are:

Sara Snacker Cookies
I loved this company. As they say on their site "Nostalgia will fill your eyes while delicious cookies and treats fill your belly."

Flavors include: Chipn'etzel Chipn’etzel ™— The Original Potato Chip and Pretzel Cookie Vanilla Milkshake Cookie, and lemonade cookeis (with real lemonade inside)
Star D/Dairy.

Shiloh's sauces.
Shiloh is a restaurant in LA and is now bottling the sauces they use in their restaurant. Flavors include: Harissa, a haroset tapenade, mild flavor and spicy flavor, chimichurri, béarnaise, Caribbean, shilohs famous bar b que sauce and bottled in an exquisite bottle and jar. The bernaise was my favorite. I showed the packaging to someone on the bus to the train and they thought it looked great. No preservatives, no msg, no gmos, no trans fat, no articial colors or flavors and gluten free

Harvest Song preserves.
I reported last year that they were going to be kosher under the OU. Now, their packaging is starting to reflect this fact. I tried their Wild Strawberry preserves. I generally do not like jams but this wild strawberry preserve was phenomenal. Some other flavors are: apricot (nasft gold winner 2006), peach, quince, tea rose petal, golden fig, fresh walnut and sour cherry (nasft gold winner 2007)

here is my list of 10 items that have lead to a Happier, Healthier me

1. Saying I love you to my kids and husband-it never hurts to say I love you and to let others know how you feel about them
2. Giving hugs and kisses to my kids even if it is only before bed
3. Uninterrupted time with the family-no checking emails or doing work related projects on the computer.
4. Being happy with what one has and not envying what others have. This is a hard one but is very rewarding if one can do that
5. Snuggling with kids while reading a book with them. It makes me feel close to them and creates memories that will last a lifetime and create an enjoyment of reading
6. Praying to G-d every morning. It is a chance to meditate and connect with the power who controls everything;it is a chance to realize you are not in control and to let go.
7. Rewarding myself with bowl of gelato - less fat than ice cream but lots of flavor!
8. Saving $ at the supermarket with coupons. I have just started clipping coupons and have found I have started saving lots of money at the store. Just last week I got a free mustard that my supermarket paid me to buy it!
9. Inviting guests to come for lunch on the weekend-cooking for others gives me the chance to entertain, experiment with new recipes and a chance to socialize with others
10. Never basing life on expectations. I believe happiness is based on expectations. If one expects something and it does not happen, one will be unhappy, so if ones does not have expectations one will not be disapointed.

I was in Target and found kosher ferraro rocher chocolate. I tried the Ferrero Rondnoir. I bought a 12 pack and found it was so good that I ate 8 of 12 of them (but not in 1 sitting). It contains a pearl of dark chocolate in the center instead of a hazelnut, chocolate cream instead of Nutella and crunchy chocolate bits instead of crushed hazelnuts

They moved to the US in the 1800s and just last year started the process to become kosher. This year they offer 100 calorie chocolate bars, smaller versions of their chocolate barks, as well as other chocolate treats. They hope to make everything they create kosher in the next year.

I love going to the Fancy Food Show. When I arrive there are vendors out front giving away freebies. I go into the show excited about products yet to be discovered by the kosher consumer because they have just become kosher or are in the middle of certification. I have tried grouping companies by categories but some companies have products that fit several classifications like Sweet’s so I put all the information together). I have also included company information to give you all the important information about each company and their products.

My husband tried it and said it was spicy. 11 ozs of sweet heat chipotle. It was judged as this year's winner in the Flavor of Georgia Contest, run by the state's Center for Agribusiness and Economic Development. Kosher Show Review

The Kosher Show was held on November 11-12 in New York City. I only attended on November 11 with my husband. There were more than 150 booths of which appx 100 were food related. An overall theme for me seemed to be convenience kosher foods. I noticed a lot of par boiled baked goods- Crusty Bread, Laromme Bakery, Purple Pear all had these type of products. We also noticed several companies with ravioli, and dried pastas (like Contadina).

There were the usual vendors Abeles and Heyman, Manishevitz and Rokeach that you can find at your local supermarket. Here is a round up of what I saw that looked interesting.

Alcohol

Cow Jumped Over the Moon. Delicious French wine including a $190 Domaine Gibourd Pommard 2005. My husband remarked that you could taste the quality of these wines.

Liquori Kosher OU certified Limoncello, Orange liquer, Chocolate liquer, wild fennel liquer and myrtle liquor.

Baked Goods-Dessert
Exceptional Brownie-brownies with flavors like Double Chocolate, Butterscotch blondie and raspberry swirl. The chocolate brownie was not too sweet.

Skinner Baking Company-interesting baked goods similar in look to entemmans. We tasted a really nice dulce de leche roulade

Strauss Bakery-beautiful cakes for weddings and simchas including a Louis Vuitton bag, hats and other cakes covered with fondant.

Beverages

The Simple Kitchen. Sparkling water with a splash of organic juice and honey. Flavors include: white grape, lemon & mint and pink grapefruit. Beautiful packaging and tasty product.

Trim Water Nutritionally enhanced water with only 1 g of sugar and 4 calories per serving. No Artificial colors or flavors, no aspartame. Flavors include: peach-mango, blueberry-pear and lemon-citrus

Bread product

Bagel-Os bagels filled with fillings like cream cheese, or salmon cream cheese or blueberry cream cheese. A Kosherfest winner!

Crusty Bread-delicious french bread from France that you can bake at home!

Candy

YummyEarth is introducing many new products. Some new flavors are: Blood Orange Cocktail, Chili Lime Lambada, Ginger Zest, Googly Grape, Hopscotch Butterscotch, Strawberry Smash, Roadside Root Beer, Tooberry blueberry, and Very Very Cherry. There was new mixed flavor bags of: Super Sour: with googly grape, strawberry smash, sour apple tart and very very cherry’ anti-oxi fruit drops include pomegranate pucker, tooberry blueberry, Strawberry smash and very very cherry and vitamin c drops with vitamin c added. They also have nicely packaged artisinal single candy flavors.

Cheese

Gad Dairies a full line of fetas and other Israeli cheese

Le Petite Fermiere has redone their labels.

Yotvata cheese-there was fresh mozarella, Scamorza, silamon, provolone, fontina and others from Italy

Chocolatewise. Truffles like Light caramel, Cappuccino, and vanilla. All dairy truffles are chalav Yisrael

Roland Foods had chocolate covered cherries with a stem

Rue Lafayette-pareve fondue sets. It comes packaged with 3 fondue flavors that you melt and use in the platter. The platter can be used at a later date to serve vegetables or other desserts.

Tumbador Gourmet Ring Dings-flourless chocolate cake filled with buttercream and enrobed in chocolate.

Condiments
Aunt Lupe’s Original Jalapeno Garden Mix. A delicious condiment made with jalapenos and habanera peppers.

Aunt Berta’s showed several new products such as honey, onions in red wine and reintroduced the onion jam that won a prize at kosherfest several years ago.

From Portugal

Restaurant Row
It was somewhat disappointing. There were 10 restaurants. One served tortillas and salsa which I tasted at other booths. Caffe Gio served a pasta dish with pesto dressing, Chosen Garden served some Chinese food Estihana served sushi and Grille de Paris served meat. Some of the other restaurants served some dessert items, but none of the other restaurants served items from their menu. I did not get a real sense of how good their food was and why I should travel to their restaurant. I also did not take back some ideas for my own menus, or discover the types of ingredients I should have on my store shelves (koshergourmetmart.com)
Perhaps it was different on Monday.

I find this show is disappoining in comparison with the Fancy Food Show where I hunt for interesting kosher products and there is a bigger selecion. All in all, the show was fun and I did get to spend the day with my husband.

Why do manufacturers of chocolate feel need the need to add food coloring to chocolate which has a beautiful brown color? It's not brown enough for them?

It;s getting hard to find products with out artificial food coloring in it. They should follow Dancing Deer's example of using natural colors in their icings and Yummy Earth and Pure Fun's candy. They use coloring from vegetable coloring. Vegetables have beautiful colors.

Honey is an amazing food produced by a small creature. According to The National Honey Board, bees must travel over 55,000 miles (more than the distance to the moon and back) and visit 2 million flowers to make one pound of honey. Each honey bee makes 1/12th teaspoon of honey in its lifetime. Honey is an amazing food that never spoils and contains vitamins such as B6, thiamin, niacin, riboflavin, pantothenic acid and certain amino acids. It also contains minerals calcium, copper, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc. Honey contains hydrogen peroxide, an antibacterial element, and also has cholesterol fighting antioxident properties.

Honey is first mentioned in the Bible as The Land of Israel being the land of Milk and Honey. Honey is served with apples or challah on Rosh Hashanna to signify the beginning of a sweet new year.

There are over 300 unique honeys produced in the United States each based on their floral origin.We tested 18 brands of honey that were sent to us ranging from light (acaia) to dark (chestnut). We received honey from 8 companies: Branches Honey (CA) Johnston Honey (MN), Pacific Coast (New Zealand) Rigoni (organic Italian), Savannah Bee Company (GA), Stash Tea (NY) and Zambesi honey (organic Africa).

We started with the lighter honeys and worked our way to darker honeys. Because each honey was so different than the next, I will describe each honey instead of rating them.

Johnston James Honey. It comes from the perennial gardens at the Johnston Honey farm. It had an intriguing sharpness.

Johnston Prairie Honey. This honey comes from the Minnesota prairie wildflowers. It
had a balanced mildly citrus flavor. We liked that the honey flavors lingered for a while on our tongue.

Katz and Company’s Branches Raspberry honey. It tasted orangy and smooth and had a definite taste of raspberries.

Pacific Coast Honey Blue Borage Honey. This honey is collected mainly on the South Island of New Zealand. Blue Borage Honey has a very delicate floral bouquet with a pleasant, mild, herbal scent. It is also considered to be a type of medicinal honey to help relieve stress and fatigue. It tasted floral and light.

Pacific Coast Honey Manuka honey. Manuka honey comes from the tea tree bush and is known for medicinal properties such as the healing of arthritis, sore throats, colds, indigestion, stomach ulcer, acne and pimples. This honey was very spreadable and has the consistency of peanut butter. It was unusual and good.

Rigoni Acacia Honey The honey is collected from Acacia tree blossoms thus producing a honey that is clear and pure. This honey was mild and was very liquidy. It also had a molassy orange undertone.

Rigoni Chestnut Honey This honey has the highest mineral content of all honeys. It was the least liked. It had an overpowering bitter taste that was not very pleasant

Rigoni Forest Honey This is a dark honey with an amber color. It had a strong aroma of the woods.

Rigoni Lime Honey This honey had a grassy sweet taste with floral notes. It was crystallized so it was easy to spread.

Rigoni Orange Honey This honey was crystalized also making it easy to spread. It had a straightforward taste that was quite pleasant

Sorbets are a great alternative to ice cream. Sorbets are made from fruit puree mixed with other ingredients. A serving of sorbet is generally lower in calories than ice cream and you get many of the vitamins from the fruit used. Since there is no milk used in creating a sorbet, you can serve them after a meat meal. French often serve sorbets between courses to cleanse the palette. With a good sorbet, you should be able to taste the fruit.

Legend has is that Alexander the Great was one of the first to eat a sorbet treat by combining flavorings with snow.

We looked at sorbets from Double Rainbow, Haagen Dasz, Ciao Bella, Pierre’s and Sharon’s Sorbets as well as pareve ice creams from Double Rainbow. All sorbets were pareve except for Haagen Dasz which was OU-D.

A group of 5 sat and spent nearly 2 hours tasting sorbets and pareve ice creams (poor us!) We did not know which sorbet was which so as not to have any preconceived notions on which was the best. We judged them on the following criteria: taste, color, consistency (smoothness), and price.

All sorbet servings are ½ cup and there are 4 servings per pint. No sorbet had any calories from fat.

Lemon Sorbet

Ciao Bella lemon sorbet It was very tart. If you like lemon, this is great.

Comparing the companies that created lemon, raspberry, mango and passion fruit sorbets:

Ciao Bella had the truest taste of fruit. The first ingredient in all their sorbets was the fruit itself. No corn syrups were used. In various flavors there was a considerable amount of vitamins – their passion fruit had 30% of daily value of Vitamin A and 13% of vitamin C. The lemon was quite tart and the raspberry tasted like raspberries.

Pierre’s sorbets were more impressive than their ice creams. The creaminess we tasted is probably due to stabilizers and other ingredients. In addition, they had a mild taste of flavor probably due to the fact that the 1st ingredient listed is water, and they use fruit purees rather than actual fruit. Their products were the highest in calories due to the usage of corn syrups in the purees used as well as the additional sugars and corm syrups used. In addition, the passion fruit sorbet also contained food coloring and many of their products contain little to no vitamins. For example, their raspberry sorbet contain no vitamins vs. Sharon Sorbet which had 15% of one’s daily value of vitamin C and Ciao Bella which had 15% of one’s daily value of vitamin A.

Sharon’s Sorbet had a nice line of natural tasting products. Like Ciao Bella, they list fruit as the first ingredient and do not use chemicals or corn syrups.

Double Rainbow We enjoyed Double Rainbow’s soy ice creams very much. Both flavors were top rated. We also enjoyed their sorbets even though they did contain other ingredients such as corn syrup as well as fruit purees. We felt it is worth the trip to Trader Joe’s to buy this product line.

Haagen Dasz we were not very impressed with their upscale sorbet flavor.

Overall we feel that these are a good alternative to ice creams as well as a good item to serve at a meat meal. If you like a strong fruit flavor Ciao Bella is our 1st pick and Sharon’s Sorbets a close second. If you like a more milder flavor, Pierre’s will do but you will be eating a product with higher calories,

Ice cream is a product savored by both children and adults. Eating iced treats is a treat that was eaten several centuries ago. Legend says is that Alexander the Great put flavorings in snow thus creating a snow cone. Another legend says that Marco Polo may have brought back recipes for ice cream from China. The Roman Emperor Nero used to have snow transported to Rome where it was mixed with fruit.

Ice cream made with a milk mixture was first recorded in Europe in Italy. Until the second half of the 19th century, ice cream was considered a luxury food since ice was difficult to obtain and store. In addition, ice cream had to be served immediately after being made since the freezer was not invented yet

When people were able to make ice and transport it to the city, it became possible for many to buy ice at a reasonable price. In the late 1830s, an ice-making machine was invented thus making ice cream more widely available. In 1846, a New Jersey woman named Nancy johnson, invented the hand-cranked freezer. As a result, ice cream sellers could then offer ice cream to the masses. When cheap refrigeration became commonplace, many vendors started offering their wares to the public. Commercial production was begun in North America in Baltimore, Maryland, 1851, by Mr. Jacob Fussell, now known as the father of the American ice cream industry.

Ice cream was introduced to America by colonists who brought their ice cream recipes with them. Many of our patriots like Benjamin Franklin, George Washington and Thomas Jefferson were known to have enjoyed ice cream. Dolley Madison served ice cream at her husband's Inaugural Ball in 1813.

We bought some Breyers ice cream and received samples of ice cream from six companies: Creme CrémaillPre , Double Rainbow, Graeter’s, Haagen Dazs, Pierre’s and Sheer Bliss. We received vanilla, chocolate, coffee, pomegranate chip, and various specialty flavors. A group of five of us sat and spent nearly two hours tasting ice creams (poor us!). We did not know which ice cream was which to avoid prejudice based on preconceived feelings about specific brands. We judged the ice creams based on the following criteria: taste, color, consistency (smoothness), and price.

According to the International Ice Cream Association, the top two ice cream flavors are:
Vanilla, at 29% and Chocolate at 8.9%. Coffee is #13 at 1.6% and all others, are at 23.7%. All ice cream serving calorie information is for a ½ cup.

VANILLA
FAVORITE:
Graeter’s. Their vanilla was our favorite vanilla. It was praised for its intense vanilla flavor from vanilla beans and extract. It tasted rich and had a smooth consistency. It also had a nice aftertaste.

OVERALL THOUGHTS
We felt that the Graeter’s ice creams were the best. Would we pay $70 for 6 pints to have them shipped to us? Maybe not. But if they were available locally, they were the ones to buy.

Breyers’ vanilla was a good ice cream and was enjoyed by all. Their chocolate ice cream was not as flavorful as some of the other chocolates we tried.

Nearly all the Creme CrémaillPre line of ice cream were rated excellent or very good. While we might not pay extra to have it delivered by mail, we would certainly purchase it if found nearby.

We enjoyed Double Rainbow’s vanilla and chocolate but were not as impressed by their coffee. We would drive to Trader Joe's to purchase their products. The price is also quite reasonable; it costs $3.99/quart vs. Haagen Dazs at $3.99/pint.

The Haagen Dazs Reserve line was interesting and very ambitious. However, the only flavor that was really great was the Amazon Valley Chocolate ice cream. The others were different and interesting but not worth the extra money. The regular Haagen Dazs ice cream was good too and the Mayan Chocolate was a treat.

We all thought Pierre’s ice cream had the least true vanilla or chocolate flavor. It was also the least rich in flavor due to the skim milk they use. We felt it would be great as part of a sundae or banana split..

I had tasted Sheer Bliss ice creams at the Fancy Food Show and thought they were excellent, but in our ratings the vanilla and chocolate fell short of some other brands. The metal can it comes in is pretty and makes a nice gift. However, it makes handling the ice cream container difficult.

Kosher Cheeses at Kosherfest

When I go to the Fancy Food Show I find my mouth watering when I pass the cheese displays. Many vendors bring houndreds of cheese and visitors can have tastes of hundreds if not thousands of cheeses from all over the world. Atalanta usually brings a nice selection of kosher cheese but I still feel deprived. At kosherfest, I can taste all cheeses and thus I am happy.

I went to a cheese and wine tasting at Kosherfest sponsored by Israel cheese board. We had a great time trying cheeses like Shahat, and Turquoise as well as wines. We also tried Chef Ran's recipes including crostini covered wihth goat cheese and a caramelized onion as well as a pepper filled with goat cheese with pecans.

There was a huge array of cheeses from Oneg including a gouda and cheddar. They also had a giant Oneg logo carved out of a cheese block.

We found some great new Israeli cheeses including:

feta cubes

machengo with bay leaves (also a machengo without bay leaves)

brie with pecans

We then visited Joseph Fatms who had delicious aged cheddar, monterey jack both in blocks and shredded.

More Israeli cheeses including a kosher roquefort and kosher caciotta.

Last we saw Dew-Lay cheese. They make double gloucester, red leicester and cheddar. They will be making a double gloucester with green onions soon.

All in all, a great 2 days for cheese!

At the KosherFest, I had the opportunity to meet with Tumbador Chocolate sales team. They were really nice. This company was started by pastry chef Jean-François Bonnet. Living above a bakery-pâtisserie in the town of Frejus, France the young Jean-François Bonnet was entranced by the aroma of baking breads and pastries. This early exposure evolved into a lifelong passion.
He began formal training under Michelin two-star chef Philippe Da Silva at the Hostellerie des Gorges de Pennafort, then held positions in several renowned kitchens, including Hotel Le San Pedro (Saint Raphaël), La Villa Saint Elme (Sainte Maxime), and Jacques Chibois' La Bastide Saint-Antoine (Grasse). In 2000, he relocated to New York to work as pastry chef at Monkey Bar at the Elysée Hotel. Since then, he worked as pastry chef at Cello and the Ritz-Carlton's Atelier, before accepting the executive pastry chef position at Daniel in October 2003. Some items I had were PB&J Bar-a peanut butter and chocolate confextion, (the winner at Kosherfest) chocolate mallomars, chocolate ganache and my favorite-sea salt caramels!

Michelle Daman Wasserman z"l was a good friend of mine and was a big supporter of Koshergourmermart.com. She tried this honey and thought it was so great, she ordered a case to give to friends and family for Rosh Hashanna.

We will donate all proceeds from the sale of this honey to Sharsheret in Michelle's memory.

Sharsheret is a national organization of cancer survivors dedicated to addressing the unique concerns of young Jewish women facing breast cancer. Sharsheret, Hebrew for "chain," was founded in 2001 by Rochelle Shoretz, a former Law Clerk to United States Supreme Court Justice Ruth Bader Ginsburg, who recognized the need for a breast cancer organization that would provide culturally sensitive support for Jewish women after her own diagnosis at age 28.

Since the organization's founding, Sharsheret has responded to thousands of phone calls from health care professionals, Jewish organizations, women's organizations, women affected by breast cancer, their families, and friends. Sharsheret's efforts to support young women and educate health care professionals have been recognized with prestigious awards and significant media coverage. The organization has been featured in more than 75 publications and media outlets nationwide, including the Wall Street Journal, USA Today, Self Magazine, and CBS News.

In September 2004 Oprah Magazine said “Fantastic honey is like a superb wine: sophisticated, complex, distinctive.”

2006 Fancy Food Show report

I was at the 2006 Fancy Food Show and came across lots of great products that are now kosher or will soon be kosher. The show was huge-2 floors with aisles from 100-6000. Tons of walking and any kind of food you could imagine. If you do not keep kosher, you would never be able to get through it all.

Chocolatechocolate cookbook

This cookbook is big and expensive but has some great recipes. If you like chocolate, here is one dynamite chocolate cookie recipe:

Savannahs
½ cup bleached all purpose flour
1/3 cup bleached cake flour
3 tbsp unsweetened alkalized cocoa powder
½ tsp baking powder
1 1/3 cup+2 tbsp superfine sugar
4 large eggs
1 large egg yolk
1 stick+2 tbsp unsalted butter melted and cooled to tepid
12 ozs bittersweet chocolate melted and cooled to tepid
4 ozs unsweetened chocolate melted and cooled to tepid
2 tbsp vanilla extract
3 cup semisweet choc chips

Preheat oven to 325F. Line cookie sheets with parchment paper

Mix dough-sift flours, cocoa powder, baking powder and salt

In large bowl, neat sugar, eggs. Egg yolk on moderate speed for 1 minute. Add melted butter, chocolates, vanilla and beat 1-2 mins longer or until thoroughly combined. Sift flour mixture over chocolate mixture and blend completely. Mix in chips. Let dough sit for 5 minutes

Place rounded 2 tbsp size mounds of dough on prepared pans, spacing mounds appx 2 inches apart. Range 12 mounds per pan

Bake for 12 mins or until just set. Begin checking at 10 minutes. The baked cookies will no longer look wet on top and they will be somewhat soft-OK. Let them stand on pan for 3-4 mins.

Transfer the cookies still on parchment paper to racks and cool completely. Store in airtight tin
Bake and serve within 2 days.

elite chocolate bars

I used to love Nestle's Choco-Lite Chocolate bar-chocolate with air bubbles. (Anyone remember them or Marathon bars?) Elite has made 3 aerated chocolate bars which are a close second (except chocolites were thicker)

They come in milk, white and dark. They were also kosher for passover
